Tokyo Bekana is a non-heading cabbage-like bok choy. I have seen it described as a cross between napa cabbage and lettuce. It has crunchy white ribs and soft lime-green leaves. Tokyo bekana can be eaten raw in salads or slaws or cooked in stir fries or soup.
Tokyo Bekana is only available in our CSA baskets.
