This large-headed vegetable is a type of chicory widely used in Italian cooking. Pale green with crisp yellow-white interior and a sweet, mildly bitter flavour. To reduce the bitterness, radicchio should be sliced thinly on the diagonal or shredded and dressed with olive oil and salt one to two hours before serving. It is a delicious addition to green salads and coleslaw. Keeps best in the fridge in a plastic bag or in the crisper in a bag for two to three weeks.
